Half veggies and put in a big pot with the whole chicken.
Simmer until meat comes off bones. Should be around 2 hours for 3 lb chicken, up to 4 hours with 10 lb chicken.
Remove everything from liquid, and then strain the liquid.
Chop veggies and shred the chicken (may just throw away bones and dark meat to ease preparation).
Put everything back in the pot, add salt and pepper, and serve.
